Marinated mozzarella 5-minute dinner salad

Indulge in a quick and flavorful dining experience with this marinated mozzarella salad, a perfect blend of tangy, savory, and fresh flavors.

Ingredients:

  • 170g bag of baby spinach
  • 1 handful soft herb leaves such as basil, mint, and parsley (optional)
  • 2 handfuls cherry or grape tomatoes
  • Marinated fresh mozzarella balls
  • 2 Norwegian Crispbread crackers (or another densely seeded crackers)
  • 2 tablespoons Balsamic vinegar

Instructions:

  1. Divide the bag of spinach evenly between two plates or bowls. Tear a handful of herb leaves and scatter them over the greens. Basil, mint, parsley, or a blend of any soft herbs will work well.
  2. Pour roughly 1 tablespoon of Balsamic vinegar and approximately 2 tablespoons of oil from the marinated mozzarella balls onto each salad. You don't need to measure - just drizzle until it looks good to you.
  3. Place a generous amount of tomatoes and 5-6 marinated mozzarella balls on each salad. Crumble a crispy cracker into pieces and distribute it over the top before serving.
