Marinated mint zucchini salad

Discover the fresh flavors of marinated zucchini paired with fragrant mint leaves in this refreshing salad. Perfect for a light and flavorful meal.

Ingredients:

  • 3 zucchini
  • 1/2 red onion
  • 2 lemons for zest and juice
  • 2-3 tablespoons olive oil
  • 1 handful fresh mint
  • salt and pepper

Instructions:

  1. Slice zucchini and red onion using a mandoline. If you do not have a mandoline, you can simply slice the vegetables as thinly as possible. Gently mix the vegetables together.
  2. Just before you serve, grate the zest from the lemons onto the salad and then add the strained juice.
  3. Pour a bit of olive oil and sprinkle with some salt and pepper.
  4. Wash and pat dry the mint leaves. Tear them into small pieces or slice them into thin strips using the chiffonade technique. To chiffonade, stack the leaves, roll them into a tight cylinder, and slice perpendicularly with a knife.
