Marinated mint zucchini salad

Ingredients:
- 3 zucchini
- 1/2 red onion
- 2 lemons for zest and juice
- 2-3 tablespoons olive oil
- 1 handful fresh mint
- salt and pepper
Instructions:
- Slice zucchini and red onion using a mandoline. If you do not have a mandoline, you can simply slice the vegetables as thinly as possible. Gently mix the vegetables together.
- Just before you serve, grate the zest from the lemons onto the salad and then add the strained juice.
- Pour a bit of olive oil and sprinkle with some salt and pepper.
- Wash and pat dry the mint leaves. Tear them into small pieces or slice them into thin strips using the chiffonade technique. To chiffonade, stack the leaves, roll them into a tight cylinder, and slice perpendicularly with a knife.
