Marinated kale + bulgur salad with cucumber

Indulge in the flavorful combination of marinated kale and bulgur, mixed with refreshing cucumber. A satisfying salad bursting with vibrant, fresh flavors.

Ingredients:

  • 1 cup bulgur
  • 2 tablespoons olive oil
  • 1/2 teaspoon crushed coriander seed
  • 1 sprig rosemary, leaves stripped (about 1 tablespoon)
  • 1 bunch kale, thick stems removed and sliced into 1-inch pieces (about 6 cups)
  • 2 tablespoons lemon juice and 1/4 teaspoon lemon zest
  • Kosher salt and freshly ground black pepper
  • 110g goat cheese, divided into 4 pieces
  • 1 1/2 cups chopped cucumber (from 1/2 a large seedless cucumber)

Instructions:

  1. Place bulgur in a small bowl and cover it with boiling water, making sure the water level is 1 inch above the bulgur. Cover the bowl with plastic wrap and let it sit for 10 minutes until it becomes warm and fluffy.
  2. While waiting, heat some oil in a small skillet over medium heat. Add coriander and rosemary and cook for 1 minute to toast them. Then, transfer the oil to a large bowl, and add lemon juice, zest, kale, salt, and pepper. Use your hands to massage the kale leaves into the dressing until the kale wilts and absorbs the dressing, which should take about 5 minutes.
  3. Mix the soaked bulgur and sliced cucumber into the kale. Distribute the mixture into serving bowls. Garnish with crumbled goat cheese and a drizzle of olive oil. You can serve it at room temperature or chilled.
