Marinated cucumber & tomato salad

Ingredients:

  • ⅓ cup cider vinegar
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons balsamic vinaigrette

  • 4 medium tomatoes, cored and cut into 8 wedges each (4 cups)
  • 2 medium cucumbers, sliced (4 cups)
  • 1 cup thinly sliced red onion rings

Instructions:
