Marinated cucumber salad

Ingredients:

  • 1/2 cup plus 2 tablespoons unseasoned rice vinegar
  • 2 tablespoons soy sauce 
  • 4 teaspoons sugar 
  • 4 teaspoons sesame oil 
  • 2 English cucumbers, thinly sliced on a mandoline

Instructions:

  1. Mix together the vinegar, soy sauce, sugar, oil, and 1 tablespoon of water in a medium-sized bowl until well combined. Toss in the cucumbers, cover the bowl, and allow it to soak in the fridge for a minimum of 1 hour. Serve the dish cold.
