Marinated celery salad

Ingredients:

  • 1 bunch celery (about 10 stalks)
  • 1 medium red onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1/2 cup red wine vinegar
  • 1/3 cup olive oil
  • 2 1/2 tablespoons capers, coarsely chopped
  • 1 tablespoon chopped oregano
  • 1 tablespoon chopped parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Slice the celery stalks diagonally into pieces that are about ½-inch thick. Roughly chop the leaves and put them in a big bowl. Mix in the onion, garlic, vinegar, oil, capers, oregano, parsley, salt, pepper, and crushed red pepper; stir well. Taste the mixture and add more seasonings if necessary.
  2. Cover the bowl and let it marinate in the fridge for a minimum of 1 hour or a maximum of 4 hours. Give it another mix before serving!
