Marinated carrot salad with ginger and sesame oil

Ingredients:

  • 450g carrots, peeled and shredded
  • 1 garlic clove, minced
  • 2 tablespoons sherry vinegar
  • 1 cup coarsely chopped cilantro
  • 1/2 cup grapeseed oil
  • Salt and freshly ground pepper
  • 1/3 cup fresh carrot juice
  • 2 tablespoons mayonnaise
  • 1 1/2 teaspoons Asian sesame oil
  • 3/4 teaspoon fresh ginger juice, squeezed from 2 teaspoons finely grated fresh ginger

Instructions:

  1. Combine shredded carrots, garlic, vinegar, half of the cilantro, and quarter cup of grapeseed oil in a medium bowl. Season with salt and pepper. Allow the carrots to marinate for 15 minutes, then drain them well.
  2. While the carrots are marinating, simmer the carrot juice in a small saucepan over medium heat until it reduces by half, for about 5 minutes. Let the reduced carrot juice cool slightly, then mix it with mayonnaise, sesame oil, ginger juice, and the remaining quarter cup of grapeseed oil. Season the carrot dressing with salt and pepper.
  3. Mix the carrot dressing and the rest of the cilantro with the marinated carrots. Toss the salad thoroughly. Transfer to a plate and serve immediately.
