Mardi gras salad

Indulge in the vibrant flavors of Mardi Gras with this festive salad bursting with a colorful medley of fresh ingredients and zesty Cajun dressing. Perfect for a taste celebration!

Ingredients:

  • 2 small sweet potatoes, peeled and cut into 1/2-inch pieces (about 2 cups)
  • 4 small red and golden beets, peeled and cut into 1/3-inch pieces (about 2 cups)
  • 1/3 cup extra-virgin olive oil, divided 
  • Kosher salt and freshly ground black pepper 
  • 2 teaspoons Dijon mustard 
  • 1 teaspoon Creole seasoning
  • 1 teaspoon onion powder 
  • Pinch of sugar 
  • 1 tablespoon red wine vinegar 
  • 2 cups finely shredded green cabbage 
  • 2 cups finely shredded red cabbage 
  • 1/2 cup sliced green onions 

Instructions:

  1. Heat up the oven to 200 °C. Prepare a baking sheet by lining it with parchment paper.
  2. Mix the sweet potatoes and beets on the baking sheet. Pour 3 tablespoons of the oil over them, season with salt and pepper, and mix well. Spread them out in a single layer and bake until the sweet potatoes are cooked through and the beets are soft, which should take about 25 minutes. Take them out of the oven and let them cool.
  3. In the meantime, blend the mustard, Creole seasoning, onion powder, and sugar together in a big salad bowl. Stir in the vinegar, then gradually add the remaining 2 tablespoons plus 1 teaspoon of oil while stirring continuously until the dressing thickens.
  4. Combine the green and red cabbage and green onions in the bowl and mix well with the dressing. Add the roasted sweet potatoes and beets and gently mix everything together. Season with salt and pepper according to your preference.
