Manuka bacon, apple & goat's cheese salad with honey lemon dressing

Ingredients:
- 8-12 rashers of bacon
- 1 teaspoon olive oil
- 8 handfuls salad leaves
- 2 apples, cored & sliced
- 1 cup goat's cheese, crumbled
- 4-5 tablespoons lemon juice
- 3-4 tablespoons runny honey
Instructions:
- Warm the olive oil in a skillet and cook the bacon on medium heat until it becomes crispy. Remove from heat.
- As the bacon is cooking, prepare the dressing by simply combining the lemon juice and honey.
