Manuka bacon, apple & goat's cheese salad with honey lemon dressing

Indulge in the delightful combination of Manuka bacon, crisp apple, tangy goat's cheese, and zesty honey lemon dressing in this tantalizing salad.

Ingredients:

  • 8-12 rashers of bacon
  • 1 teaspoon olive oil
  • 8 handfuls salad leaves
  • 2 apples, cored & sliced
  • 1 cup goat's cheese, crumbled
  • 4-5 tablespoons lemon juice
  • 3-4 tablespoons runny honey

Instructions:

  1. Warm the olive oil in a skillet and cook the bacon on medium heat until it becomes crispy. Remove from heat.
  2. As the bacon is cooking, prepare the dressing by simply combining the lemon juice and honey.
  3. Mix the salad greens, apple, and bacon with a small amount of the dressing. Use just sufficient dressing to cover the leaves lightly. Distribute evenly among 4 plates.
  4. Sprinkle the goat cheese on top and serve promptly.
