Mango salad and scallop avocado sandwich

Ingredients:

  • 12 scallops
  • 0.5 mango
  • 0.5 avocado
  • 0.5 tablespoons curry powder
  • 2 tablespoons olive oil
  • 1 tablespoon balsamico vinegar
  • 1 tablespoon lime juice
  • 450g green salad
  • Salt and pepper

Instructions:

  1. Dice half of the mango into small pieces and slice the remaining half for garnish. Combine the diced mango with curry, olive oil, balsamic vinegar, and lime juice in a bowl. Stir well!
