Mango & melon salad

Enjoy the refreshing combination of ripe mango and juicy melon in this delightful salad bursting with sweet and tangy flavors. Perfect for a light and healthy meal.

Ingredients:

  • 2 large mangoes, ripe but firm (about 1 & 1/2 cups)
  • 1 small honeydew melon (about 1 cup)
  • 2 tablespoons shredded mint, plus extra small mint leaves to garnish
  • Pinch of red peppercorns, roughly crushed
  • Freshly ground black pepper, to taste
  • Pinch of Salt
  • Herb oil (rosemary, etc)

Instructions:

  1. Remove the skin from the mango and cut off the sides. Next, make a crosshatch pattern, with one last cut to form mango pieces. Cut the honeydew melon into small cubes and mix together, adding a bit of salt and fresh mint leaves.
  2. Top it off with crushed pink peppercorns, a sprinkle of black pepper, and a splash of herb-infused oil
