Indulge in a flavorful mango-marinated seared swordfish complemented by a vibrant tropical fruit salsa. A delightful burst of exotic flavors awaits!

Ingredients:

  • 1/4 cup mango nectar
  • 3 tablespoons canola oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 1 (30-ounce) can tropical fruit salad, drained
  • 1 tablespoon fresh cilantro leaves
  • 4 scallions, finely chopped
  • 1/2 lime, juiced
  • 1/2 small jalapeno, seeded and minced
  • Kosher salt
  • 4 (6 to 8-ounce) swordfish steaks
  • 2 tablespoons canola oil

Instructions:

  1. To prepare the marinade: Combine marinade ingredients in a small bowl. Transfer the mixture into a large resealable plastic bag, then add the swordfish. Seal the bag and shake it well to ensure the steaks are coated evenly. Refrigerate the bag and let the fish marinate for a minimum of 1 hour, remembering to turn it occasionally.
  2. For the salsa: Cut the drained fruit into small pieces. Mix the fruit with the rest of the salsa ingredients in a bowl, and refrigerate the mixture to allow the flavors to blend while the fish is marinating.
  3. Heat canola oil in a large skillet over medium-high heat. Take the fish out of the marinade, dry it with a paper towel, and cook until it is cooked through, which should take about 5 minutes on each side.
  4. Present the cooked fish topped with the prepared salsa.
