Make-ahead chicken pasta salad

Delicious make-ahead chicken pasta salad perfect for a quick and tasty meal. Packed with fresh ingredients and zesty flavors. Ideal for busy days!

Ingredients:

  • 170g casarecce pasta
  • 230g haricots verts (French green beans), cut into 2-in. pieces
  • ⅝ teaspoon kosher salt, divided
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • ¼ teaspoon ground black pepper
  • ½ teaspoon honey
  • 2 cups shredded, cooked chicken breast (about 6 oz.)
  • 1 cup cherry tomatoes, halved
  • 60g crumbled feta (about 1/4 cup)
  • 2 tablespoons torn fresh basil

Instructions:

  1. Prepare pasta following the instructions on the package. In the final minute of cooking, add the green beans. Once cooked, drain the water and rinse the pasta and green beans under cold water until they reach room temperature, which should take around 30 seconds. Make sure to drain thoroughly. Put them in a large bowl, add 1/2 teaspoon of salt, and mix well; set aside.
  2. In a small bowl, combine oil, vinegar, pepper, honey, and the remaining 1/8 teaspoon of salt. Add chicken, tomatoes, feta cheese, and the prepared dressing to the bowl with the pasta and green beans. Toss everything together until evenly coated. You can either serve it immediately or refrigerate for up to 24 hours. Sprinkle with basil right before serving.
