Magic noodle salad

Ingredients:

  • 90g woonsen noodles (mung bean thread noodles; also called cellophane or glass noodles)
  • 1/60g dried butterfly pea flowers
  • 4 whole shrimp, blanched
  • 2 cherry tomatoes, halved
  • 1 tablespoon ground peanuts
  • 1 tablespoon chopped cooked bacon 
  • 1 teaspoon chopped green onion 
  • 1 teaspoon chopped fresh cilantro 
  • 1 teaspoon sliced shallot 
  • 1 teaspoon chopped garlic
  • 1 Thai chile, chopped
  • 2 tablespoons palm sugar 
  • 1 tablespoon fish sauce (salt may be substituted) 
  • 2 tablespoons lime juice 

Instructions:

  1. To prepare the noodles: Let the noodles and butterfly pea flowers soak in 16 ounces of water overnight.
  2. After they have soaked, take out the noodles from the flower-infused water. Boil the blue flower water and cook the noodles in it until they are cooked through, which should take about 2 minutes. Then, transfer the noodles immediately to lukewarm water to halt the cooking process.
  3. Preparing the toppings: Combine the noodles with shrimp, tomatoes, peanuts, bacon, green onion, cilantro, and shallot in a mixing bowl.
  4. Making the dressing: Crush the garlic and chile using a mortar and pestle. Mix in the palm sugar and fish sauce, and keep pounding until they are fully dissolved. Then, add the lime juice and mix well.
  5. Finally, pour the dressing over the noodles and toppings, and mix everything together thoroughly!
