Mackerel & new potato salad
Experience the delightful combination of tender mackerel and creamy new potatoes in this fresh and flavorful salad. Perfect for a light and satisfying meal.
Ingredients:
- 200g new potatoes
- 125g green beans, halved
- 1 shallot, finely chopped
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- 2 tsp Dijon mustard
- small handful of dill, finely chopped
- 3 cornichons, sliced
- 100g watercress
- 100g peppered hot smoked mackerel, flaked
Instructions:
- Boil the potatoes in a pot of salted water for 12-15 mins, or until they can be easily pierced with a knife. In the last 3 mins, add the green beans to the pot, then drain and let them steam-dry for 5 mins. Combine the shallot with vinegar, oil, mustard, dill, and cornichons, season to taste, and set it aside.
- Once the potatoes have cooled down a bit, cut them in half and gently mix them with green beans, dressing, watercress, and mackerel. Distribute the mixture onto two plates and drizzle any remaining dressing on top before serving.
