Mâche salad with crispy shallots

Ingredients:
- cup all-purpose flour
- Kosher salt and freshly ground black pepper
- large shallots, thinly sliced
- cup milk, preferably whole
- Vegetable oil (for frying; about 3 cups)
- tablespoon red wine vinegar
- teaspoons Dijon mustard
- tablespoons olive oil
- ounces mâche, mizuna, or baby arugula (about 12 cups)
Instructions:

- Put flour in a flat container and add salt and pepper. Mix shallots and milk in a medium bowl; allow to sit for 15 minutes. Remove from liquid, coat shallots with flour mixture.
- Prepare a medium saucepan with a thermometer; pour vegetable oil to reach 2 inches. Warm over medium-high heat until the thermometer shows 350°F. Cook shallots in 3 separate batches, making sure the oil returns to 350°F between each batch, until they turn golden, for approximately 1 minute. Transfer the shallots to a plate lined with paper towels using a slotted spoon; sprinkle with salt.
- In a large bowl, mix vinegar and mustard; season with salt and pepper. Slowly add olive oil while whisking until the vinaigrette is blended.
- Combine mâche in the bowl with the vinaigrette; top with the crispy shallots.
