Mâche and blood orange salad
Delight your taste buds with a vibrant Mâche salad featuring juicy blood oranges. A perfect blend of freshness and zest in every bite.
Ingredients:
- 1 teaspoon fennel seeds
- 2 blood oranges
- 1 lime plus 1 tablespoon fresh lime juice
- 1/2 cup fresh orange juice
- 1/4 teaspoon sugar
- 1 1/2 tablespoons grapeseed oil
- 1/2 tablespoon extra-virgin olive oil
- Salt and freshly ground pepper
- 170g mâche (8 cups)
- 1 Belgian endive—cored, halved lengthwise and sliced crosswise
- 30g spicy sprouts, such as radish
Instructions:
- Toast the fennel seeds in a small pan until they become aromatic, which should take around 1 minute. Then, transfer them to a plate to cool down.
- Using a sharp knife, remove the outer peel of the blood oranges and the lime, making sure to eliminate all the bitter white part. Cut between the segments to release them into separate bowls. Squeeze the juice from one of the blood orange segments into a small saucepan and discard the rest.
- Combine the lime juice, orange juice, and sugar in the saucepan. Simmer over low heat until the mixture reduces to 2 tablespoons, approximately 5 minutes. Pour the juice over the lime segments. Allow it to cool before adding the grapeseed oil, olive oil, and toasted fennel seeds. Season with salt and pepper.
- Mix the mâche with the endive and sprouts in a large bowl. Pour the dressing over and toss until everything is coated. Add the blood orange segments and toss again. Arrange the salad on plates and serve.
