Macaroni salad

Delicious and satisfying macaroni salad recipe perfect for any occasion. Packed with flavors of creamy dressing, crunchy vegetables, and savory seasonings.

Ingredients:

  • Kosher salt
  • 2 cups elbow macaroni
  • 1 cup halved grape tomatoes
  • 8 radishes, thinly sliced
  • 1/2 green bell pepper, diced
  • 6 scallions (white and light green parts only), thinly sliced
  • 1/2 English cucumber, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic salt
  • Freshly ground pepper

Instructions:

  1. Start by heating a large pot of salted water until it boils. Cook the macaroni following the package instructions until it is cooked but still firm. After cooking, strain the macaroni and allow it to cool down.
  2. Mix the macaroni with the tomatoes, radishes, bell pepper, scallions, and cucumber in a big bowl.
  3. In a tiny bowl, blend the mayonnaise with the vinegar, mustard, sugar, and garlic salt. Pour the dressing over the macaroni and veggies and mix well. Add salt and pepper to taste. Chill in the refrigerator until ready to serve.
