Macaroni salad

Try our delicious macaroni salad recipe, featuring al dente pasta, crisp veggies, and a creamy dressing. Perfect for picnics, barbecues, and potlucks.

Ingredients:

  • Coarse kosher salt
  • One 16-ounce box elbow macaroni
  • 1 cup shredded mild Cheddar cheese (110g)
  • 1/2 cup mayonnaise, or to taste
  • 2 teaspoons celery seed
  • 2 teaspoons Dijon mustard, or to taste
  • 3 carrots, shredded
  • 3 celery stalks, very finely chopped
  • 1/2 sweet onion, very finely chopped
  • Freshly ground black pepper

Instructions:

  1. In a large pot, bring salted water to a vigorous boil. Cook the macaroni until it's soft, which usually takes around 10 minutes or as per the instructions on the package. Use a colander to drain and rinse the macaroni under cold running water until it's cool. Gently shake off any excess water and transfer the macaroni to a big bowl. 
  2. After the macaroni has cooled down, mix in the cheese, mayonnaise, celery seed, mustard, carrots, celery, and onions. Stir thoroughly to blend the ingredients and season with salt and pepper. Cover the bowl with plastic wrap and refrigerate until it's cold, this will take at least 2 hours. Adjust the seasoning with salt, pepper, and mayonnaise to taste right before serving.
