Macaroni and egg salad

Ingredients:

  • 1/4 cup minced red onion
  • 230g elbow macaroni
  • 1 chopped celery stalk
  • 1 chopped hard-cooked egg
  • 1/3 cup mayonnaise
  • pinch of cayenne pepper
  • 1 tablespoon white wine vinegar
  • 3 tablespoons chopped parsley
  • salt and pepper

Instructions:

  1. Submerge 1/4 cup finely chopped red onion in chilled water, let it sit for 10 minutes, then discard the water. Prepare 8 ounces of elbow macaroni following the instructions on the package; drain and rinse with cold water.
