Mac salad

Delicious and creamy mac salad, the perfect side dish for any meal. Made with a flavorful combination of macaroni, fresh veggies, and savory dressing.

Ingredients:

  • 8 cups water
  • 230g uncooked elbow macaroni
  • 3 tablespoons kosher salt, divided
  • 2 medium-size russet potatoes, peeled and cut into 1/2-inch cubes
  • 2 cups mayonnaise
  • 4 hard-boiled eggs, peeled and roughly chopped
  • 1 medium carrot, shredded on large holes of box grater (about 1/2 cup)
  • 1 1/2 teaspoons garlic salt
  • 1 teaspoon black pepper, plus more for serving

Instructions:

  1. Place 8 cups of water in a medium saucepan over high heat and bring it to a boil. Add macaroni and 2 tablespoons of kosher salt. Cook until the noodles are soft but still firm, about 2 minutes longer than the package directions. Drain the macaroni using a colander, rinse it under cold water, and then set the colander over a large bowl. Cover and let it drain in the refrigerator for at least 2 hours.
  2. In a medium saucepan, combine potatoes with the remaining 1 tablespoon of kosher salt. Add enough cold water to cover the potatoes by 1 inch. Bring it to a boil, then reduce the heat to medium and simmer until the potatoes are tender, which should take about 10 minutes. Drain the potatoes and set them aside.
  3. In a large bowl, mix together mayonnaise, eggs, carrots, garlic salt, and pepper. Gently fold in the cooked potatoes and macaroni. Refrigerate until you're ready to serve. Sprinkle with additional pepper before serving.
