Long beach coleslaw

Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 1/2 red onion, thinly sliced
  • 2 tablespoons minced garlic (about 6 cloves)
  • 1/2 small head red cabbage, trimmed and cut into 1/8-inch shreds
  • Fine sea salt and freshly ground pepper
  • 1 cup red wine vinegar
  • 2 heads iceberg lettuce, trimmed and cut into 1-inch squares
  • 1 cup thick, chunky blue cheese salad dressing (such as Marie's)

Instructions:

  1. Heat olive oil in a big pan over medium to high heat. Add red onion and garlic and cook for 2 minutes without browning them. Next, add cabbage, 1 teaspoon of salt, 1 tablespoon of pepper, and vinegar, mix everything well and cook for 3 to 5 minutes until the cabbage becomes tender. Put the mixture in a bowl and allow it to cool down to room temperature, then refrigerate it for 30 minutes.
  2. Take a large salad bowl, mix the lettuce with blue cheese dressing. Drain the cabbage and gently combine it with iceberg lettuce and dressing. Adjust the seasoning with more pepper according to your taste preference. Serve the salad immediately.
