Lobster salad on cucumber slices

Ingredients:

  • 1 or 2 cucumbers, depending on their size
  • 450g frozen lobster meat, thawed and drained
  • 1/2 cup mayonnaise
  • 1/4 cup finely diced yellow pepper
  • Salt and pepper to taste

Instructions:

  1. Peel the cucumber and cut it into slices that are 1/8-inch thick. (The slices should be slightly thick to hold the lobster salad well.) Keep the slices in a bowl of cold water until you are prepared to put together the appetizers.
