Liz's fast fiesta salad

Try Liz's fast fiesta salad for a burst of fresh flavors! Packed with vibrant veggies, zesty dressing, and a sprinkle of spices for a delightful culinary experience.

Ingredients:

  • 1 (16-ounce) bag frozen broccoli florets
  • 1 (16-ounce) bag frozen cauliflower florets
  • 1 cup ranch dressing (most brands have 1 gram of carbohydrates or less)
  • 1 cup shredded Cheddar
  • 5 slices bacon, cooked and crumbled
  • 3 scallions

Instructions:

  1. Thaw the frozen broccoli and cauliflower in the microwave for about 5 minutes. They should be cold but not frozen solid.
  2. Mix the ranch dressing with broccoli and cauliflower ensuring an even coating. Add the shredded Cheddar and bacon, then thoroughly combine all ingredients.
