Little gem wedge salad with tahini ranch

Ingredients:

  • small garlic clove, finely grated
  • cup plain whole-milk Greek yogurt
  • Tbsp. tahini
  • Tbsp. fresh lemon juice
  • Tbsp. extra-virgin olive oil, plus more for drizzling
  • Kosher salt, freshly ground pepper
  • heads of Little Gem lettuce, halved lengthwise, or 2 heads of romaine, quartered lengthwise
  • Tbsp. white wine vinegar
  • cups torn mixed tender herbs (such as basil, dill, tarragon and/or parsley)
  • cup mixed toasted seeds (such as sesame, poppy, hemp, and/or sunflower)
  • cup sliced chives
  • Aleppo-style pepper
  • Flaky sea salt

Instructions:

  1. Combine minced garlic, Greek yogurt, sesame paste, freshly squeezed lemon juice, and 1 tablespoon of olive oil in a medium-sized bowl, mixing until well combined and creamy. Season the dressing with kosher salt and a generous amount of black pepper (it should have a speckled appearance).
  2. Mix lettuce with balsamic vinegar in a large bowl; season with kosher salt. Add a blend of fresh herbs and toss everything together again.
  3. Evenly distribute the prepared dressing onto plates and place the salad on top. Garnish with seeds, chopped chives, Aleppo-style pepper, and sea salt. Finish with a drizzle of olive oil.
