Little gem salad with pistachios and herbs
Delight in a medley of flavors with a little gem salad featuring crunchy pistachios and fresh aromatic herbs. Perfectly balanced and utterly delicious.
Ingredients:
- heads of Little Gem lettuce, halved lengthwise
- cup (2 sticks) unsalted butter
- Kosher salt
- large egg yolk
- cup raw pistachios, chopped, divided
- Tbsp. fresh lemon juice
- Extra-virgin olive oil (for drizzling)
- Freshly ground black pepper
- cups chervil
- cup sliced chives
Instructions:
- Separate the outer leaves from the Little Gems heads to obtain 8 equally sized halves of lettuce; put the outer leaves aside.
- Heat butter in a large skillet over medium heat. Add the reserved lettuce; sprinkle with salt. Saute, while stirring, until the lettuce wilts, approximately 1 minute. Transfer the wilted leaves and butter to a blender. Combine with egg yolk and 1/4 cup of pistachios; blend until the mixture becomes smooth and creamy. Adjust the seasoning with salt. (The texture should resemble that of yellow mustard. If it's too runny, you can incorporate more pistachios, or if it's too thick, you can add some water.)
- Crush the remaining 1/2 cup of pistachios using a food processor or mincing them with a knife.
- Drizzle the lettuce halves with a mixture of lemon juice and oil; season with salt and pepper. Pour the pistachio cream over them. Garnish with chervil, chives, and crushed pistachios.
