Little gem salad with fish sauce vinaigrette & fried eggs

Ingredients:

  • Olive oil
  • 2 large organic eggs
  • 1 head Little Gem lettuce, cut into bite-size pieces
  • 1 handful fresh mint leaves
  • 4 radishes, thinly sliced
  • 1 tablespoon rice vinegar
  • 1 tablespoon fish sauce, plus more for seasoning eggs
  • 1 tablespoon sesame oil
  • 1 fat pinch sugar
  • Freshly ground black pepper, to taste

Instructions:

  1. Heat some olive oil in a nonstick pan and cook the eggs sunny-side up. To avoid the runny parts, you can cover the pan with a lid for the last few seconds of cooking.
  2. While the eggs are cooking, combine Little Gem lettuce, mint leaves, and radishes in a salad bowl. Mix in vinegar, fish sauce, sesame oil, sugar, and black pepper. Use your hands to toss everything together.
  3. You can either transfer the salad to a plate or eat directly from the bowl. Remember to add the fried eggs on top of the salad and season them with a bit more fish sauce.
