Lentil-walnut salad with grapes & feta

Ingredients:

  • 1 cup French green lentils
  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/2 cup finely diced red onion
  • 2 cups halved grapes
  • 3/4 cup walnut pieces
  • 3/4 cup crumbled feta cheese
  • 1 tablespoon olive oil

Instructions:

  1. Place 3 cups of water in a medium saucepan and bring it to a vigorous boil. Add the lentils and lower the heat to a gentle simmer. Allow the lentils to cook until they are tender but still firm, approximately 20 minutes.
  2. While the lentils are cooking, combine lemon juice, vinegar, honey, and salt in a large bowl. Mix in the onions and set the mixture aside.
  3. Once the lentils are done, drain and rinse them with cold water. Add the drained lentils to the onion mixture along with grapes, walnuts, feta cheese, and oil. Gently toss everything together. Chill in the refrigerator until you are ready to serve.
