Lentil & tuna salad
Delicious lentil and tuna salad bursting with flavors of hearty lentils and savory tuna, tossed in a zesty dressing for a refreshing dish.
Ingredients:
- 2 tbsp sherry vinegar
- 1 tsp Dijon mustard
- 2 garlic cloves, finely grated
- 50ml olive oil
- 2 x 250g pouches ready-cooked puy lentils
- 2 x 160g cans tuna steaks in spring water, drained and flaked
- 160g cherry tomatoes, halved (about 10)
- 2 ready-roasted peppers, chopped
- handful of parsley, finely chopped
- ½ small bunch of chives, finely chopped, plus extra to garnish
Instructions:
- Combine the vinegar, mustard, and garlic in a small bowl and whisk until well blended. Gradually pour in the oil while whisking continuously until the mixture is emulsified. Season with salt and pepper to your liking.
- In a large bowl, mix together the lentils, tuna, tomatoes, bell peppers, and herbs. Pour the dressing over the mixture and toss everything together. Distribute the salad into four bowls and sprinkle the remaining chives on top for garnish.
