Lentil salad with smoked mozzarella and walnuts

Ingredients:

  • 1 cup dry lentils
  • 4 cups vegetarian or chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon mustard
  • 5 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 red bell pepper
  • 1/2 cup walnuts, toasted and chopped
  • 1/3 cup chopped sweet onion (Vidalia-type)
  • 170g smoked fresh mozzarella, diced
  • 2 tablespoons chopped fresh thyme

Instructions:

  1. Bring the broth and lentils to a boil, then lower the heat to simmer, cover, and cook until the lentils are soft but still slightly firm, approximately 30 minutes. Take it off the heat, let it sit in the liquid for 10 minutes, then drain the lentils into a large bowl.
  2. While the lentils are simmering, combine the lemon juice, mustard, olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper in a separate bowl or container.
  3. Pour the dressing over the warm lentils and mix well, then set aside.
  4. Char the red pepper by directly exposing it to an open flame using tongs, or by broiling it after rubbing with a bit of oil. Turn the pepper constantly until it chars completely. Transfer the charred pepper to a small paper bag and let it steam for about 10 minutes. Once steamed, peel off the charred skin, slice the pepper, discard the seeds and inner white membrane, and then dice the pepper into 1/2-inch pieces. This step can be prepared in advance.
  5. Once the lentils are warm or at room temperature, combine them with the diced red pepper, walnuts, onion, mozzarella, and thyme. Season with 1/2 teaspoon of salt (adjust to taste) and 1/4 teaspoon of pepper. Toss everything together and serve.
