Ingredients:
- 2 cups dried lentils, picked over for stones
- 1 clove garlic
- Juice of one lemon
- 1/2 cup olive oil
- 1/4 cup finely chopped parsley
- 4 plum tomatoes, chopped
- 1/2 cup diced green bell pepper
- 1 teaspoon dried basil
- Salt and pepper
Instructions:
- In a large saucepan, heat 1 quart of water until it reaches a boiling point. Add seasoning to the water and mix in the lentils. Lower the heat to a gentle simmer and cook the lentils for 20-30 minutes or until they are tender but not overly soft. Remove any excess liquid by draining them.
- Start by finely chopping the garlic clove and adding a sprinkle of salt. Using the flat side of a knife, crush the garlic into a paste. Combine the lemon juice and garlic paste in a medium bowl. Slowly whisk in the olive oil into the lemon juice. Add the parsley, tomatoes, green pepper, and basil. Gently fold in the cooked lentils and mix well. Season with salt and pepper to taste.
