Lentil salad

Delicious and nutritious lentil salad recipe, perfect for a healthy meal. Packed with flavor and fresh ingredients for a satisfying culinary experience.

Ingredients:

  • 2 quarts water
  • 450g brown lentils
  • Salt and freshly ground pepper
  • ¼ cup white wine
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ⅛ teaspoon sugar
  • ¼ cup extra-virgin olive oil
  • ½ cup finely chopped celery
  • ½ cup finely chopped onion
  • 1 tablespoon finely chopped chives
  • 1 teaspoon finely chopped thyme

Instructions:

  1. Heat a large saucepan until the water starts boiling. Put in the lentils, sprinkle with salt and pepper, and let it cook over medium-low heat, occasionally stirring, until it's soft, approximately for 25 minutes. Drain the lentils and move them to a big bowl.
  2. In a tiny bowl, mix together the wine, lemon juice, mustard, and sugar. Gradually stir in the olive oil until everything is mixed well. Season it with salt and pepper. Pour the dressing, celery, onion, chives and thyme over the lentils, mix thoroughly and serve.
