Lentil salad

Enjoy a flavorful and nutritious lentil salad packed with protein and fresh vegetables. This delicious dish is perfect for a light and satisfying meal.

Ingredients:

  • 3 cups lentils
  • 1 cup onion, diced
  • 1 cup carrots, small diced
  • 3 Tbs. granulated sugar
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil, plus 2 Tbs.
  • 1/4 cup parsley, chopped
  • salt and pepper to taste

Instructions:

  1. Cook lentils in salted water over low heat for 45 minutes until they are soft. The lentils will increase in volume. In the meantime, cook onions and carrots in 2 tablespoons of olive oil until they become tender. Move the vegetables to a big mixing bowl. Include sugar, parsley, red wine vinegar, and the remaining olive oil. 
  2. After draining the lentils thoroughly, put them into the mixing bowl. Mix everything well while the lentils are still warm. Adjust the amount of oil and vinegar to your liking. Season with salt and pepper according to your preference. Serve the dish warm, at room temperature, or cold.
