Lemony shrimp salad

Ingredients:
- 1/2 lemon, plus 2 tablespoons fresh lemon juice
- 1/2 teaspoon black peppercorns
- Salt
- 450g shelled and deveined medium shrimp
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons grapeseed or vegetable oil
- Pinch of sugar
- Freshly ground pepper
- 2 hearts of romaine, cut into 1-inch-wide ribbons
- 1 cup grape tomatoes, halved
- 1 Hass avocado, diced
- 2 tablespoons snipped chives
Instructions:
- Start by pouring water into a medium-sized saucepan. Squeeze the juice from half a lemon into the water and then drop the lemon itself into the pan along with some peppercorns and a pinch of salt. Bring the mixture to a boil. Once boiling, carefully add in the shrimp and let it cook until it curls up and turns pink, which should take around 3 minutes. Take out the shrimp using a slotted spoon and place them on a plate lined with paper towels. Let the shrimp cool quickly by placing them in the freezer for about 5 minutes.
- While the shrimp is chilling, take a large bowl and combine lemon juice, olive oil, grapeseed oil, sugar, salt, and pepper. Mix well. Toss in the romaine lettuce, tomatoes, avocado, and the chilled shrimp. Give everything a good mix. Plate the salad, sprinkle with chopped chives, and it's ready to be served.
