Lemony potato salad

Ingredients:

  • 1360g small boiling potatoes
  • 1 cup chopped celery (about 4 ribs)
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped chives
  • 1 teaspoon grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon sugar

Instructions:

  1. Place potatoes in a big pot filled with water and season with salt. Cook until they are soft, which will take around 12 to 20 minutes.
  2. While the potatoes are cooking, mix celery, mayonnaise, chives, lemon zest and juice, sugar, 1 teaspoon of salt, and 3/4 teaspoon of pepper in a large bowl.
  3. Once the potatoes are cooked, drain and let them cool down. Then, cut them into halves or quarters. Add them to the prepared mixture and mix well.
  4. Recommended wine pairing: Artezin Mendocino Zinfandel '07 or Château de Chamirey Mercurey Rouge '07
