Lemon parmesan chicken salad

  • 2 stalks celery (diced)
  • 3 green onions (diced)
  • 1/2 lemon (juice)

  • 1 tablespoon Dijon (Grey Poupon Country Dijon is the best)
  • 1 tablespoon Champagne or Red Wine vinegar
  • 3 tablespoons olive oil
  • salt and pepper

Instructions:

  1. Prepare the dressing in a medium mixing bowl by mixing together the juice of 1/2 lemon, Parmesan cheese, Dijon mustard, vinegar, olive oil, salt, and pepper. Whisk the ingredients until they are well combined and have formed an emulsion.
  2. Incorporate the rotisserie chicken, which should be either shredded or cubed, along with celery and green onion. Gently mix everything together. If the mixture seems too dry, drizzle in some additional olive oil. Taste the salad and adjust the seasoning with more salt and pepper, if needed.
