Leek salad

Ingredients:
- 4 medium leeks
- 1/2 teaspoon Dijon mustard
- 2 teaspoons balsamic vinegar
- 1/4 cup olive oil
- Kosher salt and freshly ground black pepper
- 1 teaspoon dried thyme
- 1 slice bacon, cooked crisp, chopped
Instructions:
- Trim off the dark green part of the leeks and throw it away. Slice the leeks in half lengthwise and rinse under water, making sure to inspect each layer for any dirt. Take a wide pan and pour water about halfway up the sides. Place the leeks in the pan, let them simmer gently for 12 minutes, then remove and drain the water.
- In the meantime, prepare the vinaigrette. Combine the mustard and balsamic vinegar in a small bowl, then slowly pour in the oil while whisking continuously to create an emulsion. Season with salt, pepper, and thyme. Arrange the leeks lengthwise on a small serving dish. Sprinkle with chopped bacon, drizzle the vinaigrette over them, and serve.
