Lebanese potato salad

Fresh and flavorful Lebanese potato salad recipe. Bursting with zesty Mediterranean flavors, this dish is perfect for a light and tasty meal.

Ingredients:

  • 910g russet potatoes, (about 3 medium)
  • ¼ cup lemon juice
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon salt
  • 4 scallions, thinly sliced
  • ¼ cup chopped fresh mint
  • Freshly ground pepper, to taste

Instructions:

  1. Boil the potatoes in a large saucepan or Dutch oven with some salted water until they are soft, which usually takes about 25 to 30 minutes. Once done, drain and rinse them with cold water. Then, place them on a cutting board to cool down for approximately 20 minutes. Proceed by cutting the cooled potatoes into 1/2-inch pieces.
  2. In a spacious bowl, mix together lemon juice, oil, salt, and pepper. Next, add the cooked potatoes and mix well until they are evenly coated with the mixture.
  3. Right before you are ready to serve, mix scallions and mint into the salad gently.
