Layered citrus salad

Delight in this vibrant citrus salad with layers of tangy oranges, zesty grapefruits, and juicy lemons. A burst of refreshing flavors awaits in every bite!

Ingredients:

  • 1/4 cup Champagne vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons sugar
  • Pinch of salt
  • 1 tablespoon chopped mint and/or tarragon, plus more for garnish
  • 3 Ruby Red grapefruits
  • 4 oranges
  • 6 tangerines or 3 tangerines and 3 blood oranges
  • 1/2 cup toasted unsalted pistachios, chopped
  • Sliced candied kumquats and fresh kumquats, for garnish

Instructions:

  1. Combine the vinegar and olive oil with sugar, salt, and 1 tablespoon of finely chopped mint in a small bowl, whisking until the sugar dissolves.
  2. Peel all citrus fruits with a sharp knife, ensuring to remove any bitter white pith. Slice the citrus thinly, checking for and removing any pits. Arrange the citrus on a platter or in glasses, then evenly top with the prepared dressing. Garnish with pistachios, kumquats, and mint before serving.
