Lavash pizza with a salad of greens, gorgonzola, and toasted almonds
Indulge in a flavorful Lavash pizza topped with a vibrant salad of fresh greens, creamy gorgonzola, and crunchy toasted almonds. An explosion of taste awaits!
Ingredients:
- 1/2 cup whole blanched almonds
- 1/2 tablespoon white wine vinegar
- 3 tablespoon extra virgin olive oil
- salt and pepper, to taste
- 4 pieces of lavash bread, cut into 8 by 12-inch rectangles
- 170g grated mozzarella cheese
- 8 cup baby salad greens
- 110g gorgonzola or other blue-veined cheese, crumbled
Instructions:
- Preheat the oven to 180 °C. Spread the almonds on a baking sheet and bake until they turn lightly golden (if using blanched almonds), for about 8 to 10 minutes. Coarsely chop the almonds (this step can be completed a few hours ahead). Then, raise the oven temperature to 200 °C.
- Combine the vinegar and olive oil in a small bowl and season with salt and pepper. This step can also be done a few hours in advance. Five to ten minutes before you plan to serve, place one lavash sheet on a baking sheet. Bake it in the oven until it starts to become slightly golden, which should take about 2 to 3 minutes. Take it out of the oven, sprinkle the grated mozzarella evenly over the top. Return the lavash to the oven and bake until the cheese is melted, and the lavash becomes golden and crunchy, for another 2 to 3 minutes.
- At the same time, mix the salad greens and chopped almonds with the vinaigrette. Once the lavash is crispy and golden, take it out of the oven and add one-quarter of the prepared salad on top. Sprinkle one-quarter of the Gorgonzola over it. Cut the lavash into squares or irregular shapes and serve immediately. Repeat these steps with the remaining ingredients to make a total of 4 lavash pizzas.
