L'amour looks something like yam, cabbage and chickpea salad

Ingredients:

  • 1 Sweet potato (Yam)
  • 1/2 Lemon
  • 1 bunch Cabbage greens
  • a hefty glug Olive Oil
  • 3 Cloves of Garlic
  • large handfuls Pre cooked Chickpeas
  • Salt and Pepper

Instructions:

  1. Preheat the oven to 110 °CCelsius
  2. Peel and dice the sweet potato and place it in a well-oiled roasting pan; reserve the oil for the salad dressing later.
  3. Add two whole cloves of garlic. Season generously with salt and a bit of pepper; I recommend adding the pepper towards the end to prevent burning.
  4. Place the pan in the oven and roast for approximately 20-30 minutes (depending on desired crispiness).
  5. After 5 minutes, blanch the cabbage leaves in simmering water for 15 minutes to maintain their freshness and crunchiness.
  6. Arrange the sweet potato on a serving plate, leaving the oil in the pan... add the chickpeas and cabbage. Squeeze half a lemon over the dish and mix everything well. Enjoy!
  7. Mash the roasted garlic in the pan to release the juices, stir well, and drizzle over the salad.
