Lacinato kale & mint salad with spicy peanut dressing

Indulge in the flavors of Lacinato kale and fresh mint topped with a zesty spicy peanut dressing. A burst of culinary creativity in every bite!

Ingredients:

  • 1 bunch (large) lacinato kale, chopped very small, almost minced
  • 1 cup fresh mint, minced
  • 1 cup walnuts, chopped
  • 3 tablespoons smooth natural peanut butter
  • 3 tablespoons warm water
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh garlic, minced
  • 2 teaspoons fresh ginger, peeled and minced
  • 1 teaspoon sesame oil
  • 1 teaspoon dried red chili flakes

Instructions:

  1. Mix together the diced kale, chopped mint, and walnuts. In case you haven't prepared the dressing, proceed with that step.
  2. Combine peanut butter, lukewarm water, minced garlic, rice vinegar, pomegranate molasses, soy sauce, grated ginger, sesame oil, and crushed red pepper in a blender. Blend on high until the mixture achieves a smooth consistency.
  3. Drizzle the prepared dressing over the salad. You can start by adding and mixing about half of the dressing, then adjust according to taste.
