Kohlrabi and apple salad with caraway

Ingredients:
- teaspoon caraway seeds
- tablespoons olive oil
- tablespoons white wine vinegar
- tablespoon Dijon mustard
- Kosher salt and freshly ground black pepper
- medium kohlrabi or 1 medium celery root (celeriac), peeled, thinly sliced on a mandoline
- small heads frisée, torn into bite-size pieces (about 6 cups)
- crisp red apple (such as Pink Lady or Honeycrisp), thinly sliced
- tablespoons chopped fresh chives, divided
Instructions:
- Roast caraway seeds in a small non-stick frying pan on medium heat, stirring frequently, until they release an aroma, for approximately 3 minutes. Allow them to cool down, then roughly chop them.
- Beat together caraway seeds, olive oil, vinegar, and mustard in a spacious bowl; add salt and pepper to taste.
- Combine kohlrabi, frisée, apple, and 2 tablespoons of chives in the same bowl with the dressing and mix well to coat; season with salt and pepper.
- Sprinkle the remaining 2 tablespoons of chives on top of the salad just before serving.
