Kiwi & feta salad from nadiya hussain
Indulge in the delightful blend of tangy feta cheese and fresh kiwi slices in this vibrant salad by Nadiya Hussain. A burst of flavors in every bite!
Ingredients:
- 5 tablespoons extra-virgin olive oil
- 5 tablespoons freshly squeezed lemon juice
- 3 tablespoons honey
- 1 garlic clove, finely grated
- 1 tablespoon za’atar
- 1/4 cup tahini
- 1 red onion, peeled and finely diced
- 8 kiwis, firm and not overripe, ends trimmed, chopped into chunks, skins and all
- 1 large cucumber, seedless or seeded
- 200g feta, crumbled or roughly chopped
- 1 handful fresh dill, finely chopped
- 2 tablespoons black sesame seeds
Instructions:
- Begin by preparing the dressing at the base of a large serving dish. (This technique helps with cleanup as well.) Combine the oil, lemon juice, honey, garlic, za’atar, and tahini and stir well.
- Incorporate the onion thoroughly. The onion will become tender as it marinates in the dressing. Add the kiwi.
- For the cucumber, cut it lengthwise, deseed it using a small spoon, and slice it into long strips, then cubes. Put them in the dish. Sprinkle the feta over the top and garnish with the diced dill and sesame seeds.
- Avoid combining the salad until you're ready to serve to prevent wilting and maintain freshness. If preparing in advance, store it covered in the refrigerator until serving time.
