Killer kale salad

Ingredients:
- 4 thin slices bacon, cut into bits
- 1 tablespoon butter
- 1 medium red onion, halved and sliced
- 230g white mushrooms, sliced
- 1/2 cup white wine
- Kosher salt and freshly ground black pepper
- 3/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 teaspoon dried thyme
- 450g kale
- 110g goat cheese, crumbled
Instructions:
- Cook the bacon pieces in a pan on medium heat until they are slightly crispy. Place the bacon on a paper towel to remove excess grease. Discard most of the bacon fat from the pan and add the butter. Cook the onions over low-medium heat until they are tender, which should take about 10 to 15 minutes. Transfer them to a plate. Add the mushrooms to the pan and sauté them, then pour in the wine and season with salt and pepper. Increase the heat to medium-high and cook until most of the wine has cooked off and the mushrooms are soft, which should take a few minutes. Set them aside.
- Combine the olive oil, vinegar, thyme, and seasoning in a mason jar, then shake the jar to mix the ingredients together.
- Separate the kale leaves from the stems, roll them up in small batches, and slice them thinly. Place the sliced kale in a bowl. Pour half of the dressing over the kale and mix it in. Then add in the mushrooms, onions, and bacon, and mix again. Finally, add the goat cheese and extra dressing if desired, and mix well. (Save any leftover dressing for later use.)
