Kicked-up seafood salad

Ingredients:
- 450g medium shrimp, peeled, deveined and tails removed
- 1.5 cups chilled Clamato juice
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
- 2 avocados, peeled, pitted and cut into small chunks
- Kosher salt and freshly cracked black pepper
Instructions:
- Start by bringing a large pot of water with plenty of salt to a boil. Get a bowl filled with cold water and ice ready. Place the shrimp into the boiling water and cook for approximately 3 minutes until done. Then, use a slotted spoon or strainer to move the shrimp into the icy water to halt the cooking process. Once cooled, drain the shrimp, dry them gently, and chop them roughly.
- Combine Clamato, lime juice, cilantro, avocado, and the cooked shrimp in a bowl. Season with salt and pepper according to your preference.
