Kicked-up seafood salad

Ingredients:

  • 450g medium shrimp, peeled, deveined and tails removed
  • 1.5 cups chilled Clamato juice
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped cilantro
  • 2 avocados, peeled, pitted and cut into small chunks
  • Kosher salt and freshly cracked black pepper

Instructions:

  1. Start by bringing a large pot of water with plenty of salt to a boil. Get a bowl filled with cold water and ice ready. Place the shrimp into the boiling water and cook for approximately 3 minutes until done. Then, use a slotted spoon or strainer to move the shrimp into the icy water to halt the cooking process. Once cooled, drain the shrimp, dry them gently, and chop them roughly.
  2. Combine Clamato, lime juice, cilantro, avocado, and the cooked shrimp in a bowl. Season with salt and pepper according to your preference.
