Khamang kakdi (cucumber and peanut salad)

Ingredients:

  • 1/2 cucumber, very finely chopped, skin on
  • 2 tablespoon toasted peanuts, coarsely crushed
  • 2 tablespoon finely chopped cilantro leaves
  • 1 tablespoon freshly grated or dried coconut
  • 1 teaspoon vegetable oil
  • 1 teaspoon black mustard seeds
  • 6 fresh or 10 dried curry leaves
  • salt

Instructions:

  1. Mix the cucumber, peanuts, cilantro, and coconut in a bowl.
  2. Warm up the oil in a small pan on high heat and put in the mustard seeds. Once they start popping, toss in the curry leaves (carefully backing away from the pan if using fresh leaves, as they may sizzle), then drizzle the oil onto the cucumber mixture.
  3. Sprinkle salt for seasoning right before serving.
