Kartoffel and verenika

Ingredients:
- 5 egg yolks
- 1/2 cup muffin mix
- 2 cups vegetable oil
- 1 onion, sliced
- 2 potatoes, boiled and mashed
- Fine salt and freshly ground black pepper
- 1 cup salad croutons
- 1 cup sour cream
Instructions:
- Mix together egg yolks and muffin mix until well combined and form a smooth dough.
- In a medium saucepan, sauté the onions in vegetable oil until they are tender, which should take around 8 minutes. Take the saucepan off the heat. Separate the onions from the oil by straining them, keeping both the oil and onions aside.
- Combine mashed potatoes, 4 tablespoons of the reserved onion-infused oil, salt, and pepper in a bowl.
- Roll out the dough to a 1/8-inch thickness using a rolling pin. Cut the dough into 2-inch square pieces. Place a spoonful of the potato mixture in the center of each square. Fold the corners of the dough over the filling and seal them together.
- In a large pot, bring salted water to a boil. Add the Kartoffel and Verenika and gently boil for 10 minutes. Drain the water.
- When ready to serve, garnish with sautéed onions and croutons. Finish with a dollop of sour cream.
