Kale sushi salad

Ingredients:

- 1-2 tablespoons pickled ginger
- 1/2 small avocado (chopped)
- a few tablespoons shelled edamame
- 1 tablespoon raw sesame seeds
- 90g firm tofu (raw and chopped into cubes)
- 1-2 teaspoons sriracha
Instructions:
- Combine the fresh vegetables in a spacious bowl and toss with the sauce (oil, vinegar, soy sauce, and sriracha). Next, incorporate the pickled ginger, diced tofu, edamame, and sesame seeds. Allow it to rest and soak in the refrigerator for at least 30 minutes. When ready to serve, mix in the diced avocado.
