Kale & strawberry salad

Ingredients:

  • 8 cups chopped lacinato kale
  • 5 tablespoons extra-virgin olive oil, divided
  • ½ teaspoon salt, divided
  • 1 tablespoon cider vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon ground pepper
  • 1 ½ cups hulled and halved fresh strawberries
  • 60g garlic-and-herb goat cheese, crumbled
  • ⅓ cup chopped toasted walnuts

Instructions:

  1. Mix kale, 2 tablespoons of oil, and 1/4 teaspoon of salt in a big bowl. Rub the kale with your hands until it is evenly coated, for approximately 1 minute.
  2. Beat together vinegar, mustard, pepper, and the remaining 1/4 teaspoon of salt in a small bowl. While whisking constantly, slowly pour in the remaining 3 tablespoons of oil.
  3. Include strawberries, goat cheese, and walnuts to the kale; pour the dressing over the salad and lightly mix to blend.
